If you like a wee tangy edge to your marmalade then this is for you. Thinly sliced spray free limes and lemons are soaked overnight in pure rainwater then slowly cooked until the rinds are tender, sugar is added then cooked with a rolling boil until setting point is reached. So traditional, so good!
Lime & Lemon Marmalade
Serve with toasted breads for breakfast, stirred through whipped cream with pavlova or layered in a Swiss sponge roll. I also have customers that dissolve a heaped tablespoon in boiled water for a lime & lemon citrus drink.
